How To Cook Quinoa – A Samsonite Staple

Quinoa (pronounced KEEN-wah) has the highest nutritional profile and cooks the fastest of all grains which makes it great for us peeps with a busy travel schedule. It is an extremely high-energy grain and has been grown and consumed for about 8,000 years on the high plains of the Andes Mountains in South America, having a remarkable tolerance for different growing conditions. Quinoa is able to survive high altitudes, thin and cold air, hot sun, salty or sandy soil, little rainfall, and sub-freezing temperatures.. which makes it the perfect fuel for flyers. Inca warriors ate balls of quinoa and fat to keep them going on long marches and in battle and more recently NASA has proposed quinoa as an ideal food for long-duration space flights.

Quinoa can be used in a variety of way which makes it versatile and fun to eat. It can be reheated with a splash of nut milk for breakfast porridge; or you can add dried fruit, coconut nectar, nuts and cinnamon for a sweet treat. Add finely chopped raw vegetables and dressing for a cooling salad or add chopped cooked root vegetables for a warming side dish. Uncooked quinoa can be kept in a sealed glass jar and stored in a cool, dry and dark place for up to a year.

  • Contains all eight amino acids to make it a complete protein
  • Has a protein content equal to milk
  • High in B vitamins, iron, zinc, potassium, calcium and Vitamin E
  • Gluten free; easy to digest
  • Ideal for endurance
  • Strengthen the kidneys, heart and lungs

Ingredients

  • 1 1/4 cups boiling water
  • 1 cup rinsed and preferably soaked quinoa. Quinoa must be rinsed prior to cooking to remove the toxic (but naturally occurring) bitter coating, called saponin. Saponin, when removed from quinoa produces a soapy solution in water.

Method

  • Using a fine mesh strainer, rinse quinoa with cool water until the water runs clear.
  • Combine quinoa and water in a saucepan. Cover and bring to a boil.
  • Reduce heat and simmer for 12mins with the lid on, until all the water has been absorbed.

I like to add a piece of kombu to the cooking water, to help make the proteins more digestible. I am sure none of you want to be bloated or crop dusting at 30,000 feet.

  • Remove from heat and let stand for 5mins, covered.
  • Fluff with a fork and serve

Where is your favourite destination to relax and unwind?

Well if it’s a work trip I can be found in Johannesburg, it’s starting to heat up and so the vitamin D combined with no jet lag works so much better for my body. The gym and spa there is amazing too! If it’s my own time, being able to take advantage of the snow and slopes of Europe (right on my doorstep), is always a great workout too! I usually follow an exhilarating afternoon of snowboarding with a heavenly hot chocolate (dark of course).

Let loose in London for 24 hours only, what would be on your list of must do and see?

London in 24hrs!!! Ok…Food Lab on Essex road Islington is a perfect breakfast/lunch local hotspot for organic, fresh, homemade delicious food. Spitalfields market for some east London culture, hidden treasures or the hippest finds on students stalls from the London College of Fashion. A ride in a London black taxi. Cocktails in ECC Chinatown but make sure you google how to find it first as it’s unmarked! A jog along the Thames passing the Tower of London, Big Ben, Tate Modern. Afternoon tea at The Wolseley.

When travelling what staple items are in your carry on luggage?

Well I definitely never travel without Elizabeth Ardens 8hr cream. The most nourishing and rehydrating cream that can be used on lips and eyes. I’d always have my ipad, a book, probably a couple of mags to flick through. A large Evian water bottle, the sports cap work best for me and also some Green & Blacks 85% chocolate for those travelling sugar lows and movie munchies!

As a frequent flyer, how do you manage your beauty sleep and GTY (gym, tan, yoga) whilst being part of the international glamourset?

I think the secret to keeping up with the GTY is about timing and using the resources available while travelling to your advantage. I’m a fan of Bikram yoga and so I always look up the studios and timetable of where I’m going and also any deals from local beauty salons that are in the area, it’s good to fuel the local businesses rather than the large hotel groups.

Where are your favourite places to shop in London for healthy, organic wholefoods and supplements?

My London favourite organic store would be Wholefoods. The store is huge and packed with everything you could imagine. More local though to me, and a shop I use daily is Mother Earth, they make the best raw pizza and raw chocolate fudge I’ve ever had, yummy!

Your award goes to…….. as London’s number one, healthy dining hotspot?

Food Lab on Essex Rd, Islington is my favourite local place to swing by for fresh juice or to have lunch/dinner. The menu changes daily, it’s all organic, prepared and cooked on site, tasty, I just wish they were all over London.

Are there any fitness classes or places to enjoy training outdoors that you would consider unique to London, to keep our bodies as trim, taut and tauriffic as yours?

Don your Nikes and headphones, set some tunes up and run! Start off at St Paul’s follow the Thames taking in all the sights, history and culture of London, crossing over Tower bridge and many more. The great thing is you can make your run as long or short as you want and even slowing to a jog or walk there’s still loads to see.

What’s your favourite on the go, healthy snack choice?

My first snack of choice is Naked cocoa orange bar. It dairy, gluten, wheat free, 100% raw and vegan, one of your five a day and MADE IN BRITAIN.

Can’t live without natural beauty enhancer to keep you looking fresh, hydrated and ready to hit the worlds best dance floors, post flight and where do you shop for it?

Water mainly, apart from that, then the beauty enhancers I can’t go without would have to be a shimmer for my lips, a dark kohl for the eyes and Rimmel scary black mascara. All available at a local pharmacy or department store. However, always a squirt of Chanel No.5 or else I’d feel nude and that’s just rude ;-)

Tell us a little bit about yourself, where you are from and why living a healthy lifestyle is important to you?
I am a qualified health and wellness coach (just a few weeks until the course is finished) from Sydney Australia. I grew up in the Inner West of Sydney and have always lived either there or in the Inner Eastern Suburbs.

Living a healthy lifestyle is important to me because I always like to feel and look my best. In my early twenties all I cared about was partying and as a result I did not take good care of my body and I always felt tired and worn out. Once I started to improve my health I noticed a huge positive shift in my energy, mood, skin and general outlook on life.

Your favourite holiday destination to calm the mind body and soul?
Definitely Byron Bay; I love how chilled and relaxed the locals are there, it has a real hippy vibe which I love. I also love that they have a wide selection of health food stores and cafes and lots of healthy produce. My ultimate goal is to be able to work from home in Byron Bay and have my own organic garden and chickens, so I can have fresh eggs every day.

Let loose in Sydney for 24 hrs only, what would be on your list of must do and see?
I would probably start by doing the Bondi to Coogee walk first thing in the morning then stop off at one of the cafes along the water for breakfast. I would then head to Mosman, hire a kayak and kayak around the national park there and eat a pre-packed lunch on one of the little secluded beaches there. For dinner I would probably head to a restaurant at The Rocks like Sake, then finish off with a cocktail at Palmer and Co in the city.

When travelling, what staple items are in your carry on luggage?
I haven’t done a whole lot of travelling since I started on this health journey but I will be travelling to London in a few weeks. I will be taking some protein balls, salads, herbal teas, nut butter, coconut water to stay hydrated (I am assuming that’s allowed on the plane), face mist, a pro-biotic that travels well, some books and my laptop on board with me.

Where are your favourite places to shop in Sydney for healthy, organic wholefoods and supplements?
I love ‘The Source Bulk Food store’ in Balmain . It’s my idea of heaven and I always end up coming out of there with way more than I intended on getting. They have massive tubs of things like nuts, maca, grains, coconut oil, natural shampoo and natural cleaning products. You just get as little or as much as you want and it always ends up being so much cheaper than buying it from other organic stores. I also love About Life in Balmain (also located in Bondi Junction and Cammeray) for things like Kombucha, beauty products and co-yo (my all time favourite food). They also have a café attached to it that does a lot of organic meals, smoothies and hot drinks with almond milk.

In Sydney, where do you frequent for healthy café culture?
Bondi Beach and just the Eastern Suburbs in general are great for healthy cafés. There are so many great organic and healthy options to choose from, however, I don’t get there very often now as I have moved to the Inner West. Balmain is starting to open up a few great healthy cafes, including About Life as I mentioned above, so I have found myself eating around there a lot recently.

Are there any fitness classes or places to enjoy training outdoors that you would consider unique to Sydney?
When I was living in the Eastern Suburbs I used to do a boot camp with ‘Bottoms up’ at Centennial Park every Saturday morning which I loved. They also do classes in Bronte and on Bondi Beach. The girls who run it are so lovely and the workouts are so much fun. I used to go for runs in Centennial Park a lot; it’s such a beautiful place with all the trees and lakes, it’s hard to believe it is right in the centre of the city and is surrounded by a busy road. Since I have moved back to Putney I like to go for runs around there as there are lots of nice parks and areas that run along the water. The Botanical Gardens is also a really scenic place to exercise.

Do you have a recipe to share that we could prepare and transport onboard for a healthy mid-flight meal or snack?
These ‘Protein Balls’ are perfect for that; you don’t need a blender to make them either so they are the perfect thing to whip up in your hotel room.

Mia’s Protein Balls

Ingredients
4 tbsp tahini
3 tbsp almond butter
½ mashed banana
4 tbsp LSA or almond meal
2 tbsp desiccated coconut
1 tbsp chia seeds
2 tbsp sunflower seeds
1 tbsp goji berries
For rolling the balls in: chia seeds, cacao, LSA or coconut (optional)

Method
Mix tahini, almond butter and banana in a bowl until combined. Add the rest of the ingredients until a dough is formed. If you find the mixture is still quite wet add in some more LSA.

Take small pieces of the dough and roll them into balls. If you wish, roll the balls in some chia seeds, cacao, LSA or coconut. Store in the fridge or freezer.

What tips do you have for people trying to eat healthy – on the go?
Preparation is key!

Make lunch and breakfast the night before so that you have one less thing to do in the morning. Smoothies are always a great option when you are on the go: either blend it up the night before and store it in the fridge in a portable jar or bottle so you can grab it before you walk out the door, or just have all your smoothie ingredients chopped up and ready the night before so you can throw it straight into the blender in the morning. I find for lunches just bringing leftovers from dinner the night before is always a great time saver. Also on you weekends or days that you have free, whip up some snacks like protein bars, bliss balls, healthy dips or trail mixes so you can keep them in your bag throughout the week whenever you are feeling peckish.

Are there any organic beauty potions that you particularly recommend for the glamouset to stay looking gorgeous throughout our journey? Where in Sydney can we get our paws on some?
As I was telling Linda the other day, I am very excited as after trying many different types of natural deodorant I have finally found one that works by Fresca Natural. I buy it from Organics On A Budget.
For a good face mist to keep your skin fresh and moisturised, I like KORA organics Rose Mist. KORA also has a good tinted moisturiser and lip balm which you can get from David Jones and About Life in Sydney.
I have also found a coconut oil based concealer by RMS beauty which I love as well.

Your take on how we met?
I met Wifey on a Melbourne/Auckland trip back in my Emirates days. I still remember us hitting Les Mills gym in Auckland together. Naturally we got on like a house on fire..and set off on many crazy vacations together! From Carnivale in Brazil to the Winter Music Fest in Miami!

Your favourite holiday destination to calm the mind, body and soul?
The Maldives. My Husband, Sun, sand, crystal clear waters and the fruits of the world = BLISS!
I urge all of you to visit The W Maldives, I’m pretty sure this place is the definition of heaven!

Brunch at Tanjong Beach Club Sentosa, followed by a morning stroll through Gardens by The Bay, Lunch at P.S Cafe in Dempsey Hill, Shopping on Orchard Road (preferably Ion), High Tea at The Fullerton Bay Hotel, Dinner and Cocktails at Ku De Ta on the roof top of Marina Bay Sands where you can look down on the light show at 8pm…then dance the night away at Pangea in the crystal pavilion under the water at Marina Bay Sands!

What staple items are in your carry on luggage?

Good quality supplements are hard to find in Singapore, so we stock up when we are in The States.

Your choice as Singapore’s healthiest and tastiest place to eat?
The Garden Restaurant at The Sentosa Resort, Sentosa Cove.
You will find the restaurant inside the Spa at The Sentosa Resort. It’s an idyllic setting, among the lush greenery , waterfall and pool – you are 100% removed from the hustle and bustle of Singapore!

For you Yogi’s – there is a Bikram Yoga studio at Harbourfront with 6 or 7 classes daily… and you may even have a visit from Bikram himself!

You can visit the amazing Fitness First gym at The Mapletree Centre – they have an outdoor cardio area fit with TRX stations – which will be sure to make you sweat in Singapore’s 32 plus degree daily heat!

What’s your favourite, on the go, healthy snack choice?
On the go – you will always catch me with one of my fresh smoothies or coconut water.

Are there any natural beauty lotions and potions that you particularly recommend for the glamourset to stay looking gorge throughout our journey? Where in Singapore can we get our mitts on some?
As AADFA (our business) is all about looking good, I swear by great skincare and weekly visits to the Dermatologist for Facial Laser Treatment, chemical peels and microdermabrasion.
For me it’s all about taking preventative actions against premature skin ageing, so I swear by Glytone! Glytone is the only skincare line available that provides a customized step approach formulated with the highest free acid values available.

Here is my smoothie recipe to keep you full …and is jam packed with so much green goodness your body will love you!

1/2 lime (I leave the rind on)
2 x apples
1/4 pineapple
1/4 medium cucumber
JUICE THESE ABOVE INGREDIENTS

NOW PUT THE BELOW INGREDIENTS IN THE BLENDER
1/2 ripe avocado
Handful of fresh wheatgrass
Small handful of fresh spinach
1 or 2 teaspoons of Greens Plus
Handful of ice cubes
Open up two caps of digestive enzymes
Add the juice that you have made above, now blend everything together!

I’ve purchased the 8oz ball mason jars, so you can add your smoothie to the jar, put the lid on and you can easily pack it to take onboard.

Where in the world is Rezz Huseyin, who are you and what do you do?
London Town, baby! If I remember to create who I am in the morning, then I am happy, healthy, connected, productive and open to all of the amazingness the Universe had to offer. If I forget to create, then its all left up to chance. The default position is a content, mildly introverted kind of chic, who is usually attending to some project or another. I do publishing and health, and I work for myself.

Your favourite holiday destination to calm the mind body and soul?
The Body Holiday, St Lucia.

Let loose in London for 24 hrs only, what would be on your list of must do and see?
I love the Kings Road for shopping and lunching (at the market). I love walks in Battersea park and Hyde Park. I love grabbing groceries at Whole Foods in Piccadilly and High Street Kensington. Soho has amazing energy and buzz and is fab for cafe hopping. Camden is fun but you gotta be in the mood for that craziness! Its cool to head to the Church at St Pauls for Alternatives on a Monday evening. St Christopher’s Place is a cute little pocket of London. So is Neal’s Yard. I have always derived great pleasure from a mosey around Covent Garden!

What staple items are in your carry on luggage?
Laptop! Ipad and phone. I am into communication! Other than that, water, raw snack bars, hand cream and vitamin D spray which doubles as breath freshener. Oh and anti bac wipes.

How do you manage to stay lively and combat jet lag upon reaching your destination?
I look after myself very well these days. My experience is that jet leg isn’t such a big problem when you are in good health and well hydrated. I think that on long flights, eating as little as possible is good, and lots of water, that goes without saying. I am usually pretty hyper when I land from a long flight! It can be a mission for me to wind down for bed. Its something that I continue to work at.

Where are your favourite places to shop in London for healthy, organic wholefoods and supplements?
Online. I order from MaxVitality, detox your world, funky raw and amazon. Otherwise, its gotta be Whole Foods.

Your choice as London’s healthiest and tastiest place to dine?
That’s tricky. Wild Food Cafe in Covent Garden is pretty great. But at the moment, I am really feeling Japanese. All that raw fish and seaweed feels so nourishing. There is a place near Finchley Road I have been wanting to try. Otherwise, its a place near me, Tsunami.

Are there any fitness classes or places to enjoy training outdoors that you would consider unique to London?
Not unique, but we have boot camp here (military style fitness in park) which people love. We just got cycling in water. Yoga just gets more and more popular.

What’s your favourite, on the go, healthy snack choice?
Watery fruit – berries or melon. Coconut water and brazil nuts.

What do you do to stay grounded after spending time “up in the air”?
Only recently become attuned to the remarkable benefits of grounding. When your destination is a beach, its easy to get grounded straight away (just walk around barefoot all the time!) Otherwise, you need to make the effort to connect with the earth. I tend to favor warm sunny places anyway so its pretty easy!

Are there any natural beauty lotions and potions that you particularly recommend for the glamourset to stay looking gorge throughout our journey? Where in London can we get our mitts on some?
Coconut oil is amazing and has multi-uses. I use on my hair as overnight moisturizer and as a sunscreen. I love Eve Lom hot polish and cleanser, it makes my skin looks great. I also love REN moisturizer for the same reasons. I am really loving burts bees lip tint at the moment.

I met Linda in NYC on her birthday in 2011. This was our first face to face. We had a number of mutual friends but never happened to be at the same place at the same time. Everyone always spoke very highly about Linda and vice versa about me to her. We friended each other on Facebook and now the rest is history.

Which gorgeous part of New York City is lucky enough to have you as a current resident?
I live in Astoria, Queens, NYC. I get to have a friendly neighbourhood feel but am just minutes away from the hustle and bustle of the city.

Tell me a bit about yourself…
I am a Canadian who was made the move to NYC 3 years ago after marrying the love of my life. I have a fond interest in cooking and sharing healthy lifestyle tips with my friends.

My must see would include: Museum of Modern Art, Barbuto, Big Gay Ice Cream shop (for those with ad sweet tooth), a stroll through the west village, the Highline and 5 ptz graffiti park.

When travelling what staple items are in your carry on luggage?
I try and only pack a carry on. Having been in a long distance relationship with Bobby for 3 years before moving here, I need to travel as light as possible. I can fit a full weeks worth of clothing in my carry on. I have a real fear that the airline will lose my luggage.

What are your best tips for staying on track with regards to healthy eating and exercise whilst away from your homely creature comforts and routine?
I like to preplan where I can find green smoothies or juice. They are the key to keeping my body in check when I am away. When on vacation I typically opt to walk every where so I can enjoy the tasty delights of what ever city I am visiting.

Where are your favourite places to shop in NYC for healthy, organic whole foods and supplements?
Whole foods and Costco are my go to but we supplement with grocery delivery from Fresh Direct. We also frequent a few little organic shops in Astoria.

What would be your choice of New York’s number one, healthy dining hotspot?
Depends how you define healthy, our favorite spot to eat out is Bareburger. I know the source of all their ingredients and they are all organic and animal friendly.

Are there any fitness classes or places to enjoy training outdoors, that you would consider unique to New York City?
Central Park is always lovely for a walk through the park, bike ride or run.

What’s your favoured on the go, healthy snack choice?
Fresh fruit. We always have a fridge full so they are easy accessible.

Beki’s take on how we met….
An amazingly beautiful story that I tell everyone. Initially met briefly in Mexico. Several months later a 48 hour layover graced NYC with Miss Linda’s presence in which we spent the entire time together. I was fortunate enough to share her first snowman building experience on a rooftop in the Lower East Side – a snowy morning I will never forget! Then I had a dream I went to visit her in Dubai. She said, you should do it! So I did. It was awesome. Then one day on another rooftop in Brooklyn, I am sitting on a blanket telling someone the story of my trip to visit Linda. All of a sudden someone comes up behind me, and who was it? LINDA. AS I WAS TALKING ABOUT HER. That’s fate! May the serendipitous journey continue.

I am Beki Powell – a multi-media artist & DJ from New York City, inspired by the magic of the universe, touched by the soul of humanity, ready to change the world. Chelsea art gallery walk, Guggenheim, Hi-Line, live music in the park.

When travelling, what staple items are in your carry on luggage?
Headphones, note/sketchbook, Chirper (my small yellow stuffed animal bird).

What are your favourite tips for staying on track with regards to healthy eating and exercise whilst away from your homely creature comforts and routine?
Find the local marketplaces for fresh fruits and veggies, bakeries for freshly-made goodies, overall just avoid processed packaged stuff. Basically, if there are 100+ ingredients for a chocolate chip cookie, it’s probably not something a human being should consume. & WALK WALK WALK EVERYWHERE. This way you don’t miss a thing, and your body will be very happy about it! But don’t wear some bullshit shoes. Wear shoes with support.

Where are your favourite places to shop in NYC for healthy, organic wholefoods and supplements?
Chelsea Marketplace, Union Square Marketplace, Fresh

Your pick as New Yorks number one healthy dining hotspot?
I’m a vegetarian so I’m a big fan of all the veggie restaurants. Red Bamboo would be my favourite, because you can get ANY meat/non vegetarian dish you could imagine, all made with soy. HIGHLY recommend.

Are there any fitness classes or places to enjoy training outdoors that you would consider unique to New York City?
There are hula hooping classes in the park, yoga in Madison Square Park, or you could go dancing at South Street Seaport Water Taxi parties!

What’s your favourite healthy snack choice, on the go?
Banana! Boom!

Can’t live without natural beauty product?
Bare minerals all day!!
